Then we had a carry-in at work. Mexican food was called for. So I made a casserole in my crock pot. I've had this pot for over 15 years and I know I don't use it to its full potential. Anywho, Google Mexican crock pot recipes and this comes up.
Quinoa, corn, black beans, enchilada sauce, diced tomatoes with green chiles, shredded cheese, chili powder, cumin and onion powder. I eschewed the green & red peppers and substituted the green chili tomatoes.
First look, not so great. I was worried that it wouldn't cook in three hours.
Done and looks like dog food a little bit. Here is where you put shredded cheese on it and let it sit a bit. Tastes yummy. Got requests for the recipe and comments from folks I had never spoken to prior to this meal. It was good in a tortilla, on chips, with liquid cheese... Yummmmm.
So I guess I am creating!
