I had purchased my first bag of lentils EVER a few weeks ago. I also bought a tiny can of green chilis and a large can of crushed tomatoes. They should have said thick tomato juice but it was perfect for me as it turns out. I wandered through some recipes online and boom I was good.
Lentils on...the take longer to cook than the bag said but then maybe they were supposed to be crunchy? I dunno, but I cooked til soft. Put some green chilis in with the tomatoes and my own special seasoning (this means opening random seasonings and sprinkling until I like what I see.)
A bit of cheese on top and a blue corn tortilla and mmmmm. That's healthy, right?
Oh wait! I ate about 125 strawberry malted milk balls....oh maybe not so healthy!
It doesn't look pretty but I like it! Good thing. I have a BOATload of it!
